A Rich Sun-Dried Tomato Cream Pasta Sauce Base for Your Week

This freezer-friendly sun-dried tomato cream pasta sauce is designed for anyone who values structure over speed. One calm Sunday prep gives you three effortless dinners—no decision fatigue, no weeknight stress. Just nourishing meals when you need them.

What You'll Need

  • 150g sun-dried tomatoes in oil, drained and chopped
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200ml double cream
  • 100ml vegetable stock
  • 50g Parmesan cheese, grated
  • 2 tbsp extra virgin olive oil
  • Fresh basil (optional)
  • Sea salt & black pepper

The Method

Heat olive oil in a pan over medium heat. Add onion and cook for 5 minutes until soft. Add garlic and cook for 1 minute until fragrant. Stir in chopped sun-dried tomatoes and cook for 2-3 minutes. Pour in vegetable stock and simmer for 5 minutes. Add double cream and Parmesan, stirring until smooth and creamy. Season with salt and pepper. If using fresh basil, stir in at the end.

✨ Optional: Smooth Version

For a silkier finish: blend half the sauce until smooth, then stir back into the chunky portion for texture.

How to Freeze & Store

Cool the sauce completely. Portion into silicone freezer trays for structured, calm weeknights (1-cup portions work perfectly for single servings). Freeze overnight. Once solid, transfer to labeled freezer bags or containers. Store up to 2 months.

Shelf life: 2 months frozen | 3 days refrigerated

How to Use During the Week

Thaw one portion overnight in the fridge, then reheat gently in a pan with a splash of pasta water. Serve with wholegrain pasta, spelt pasta, or brown rice pasta for a more nourishing, steady-energy option.

Other ways to use:

  • Toss with roasted vegetables and chickpeas
  • Spoon over grilled chicken or fish
  • Use as a filling for stuffed peppers
  • Stir into risotto for extra depth
