A Creamy Garlic Spinach Pasta Sauce Base for Your Week
This freezer-friendly garlic spinach cream pasta sauce is designed for anyone who values structure over speed. One calm Sunday prep gives you three effortless dinners—no decision fatigue, no weeknight stress. Just nourishing meals when you need them.
What You'll Need
- 300g fresh spinach (or 150g frozen spinach, thawed and drained)
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 200ml double cream
- 100ml vegetable stock
- 50g Parmesan cheese, grated
- 2 tbsp butter
- Pinch of nutmeg
- Sea salt & black pepper
The Method
Melt butter in a large pan over medium heat. Add onion and cook for 5 minutes until soft. Add garlic and cook for 1 minute until fragrant. Add fresh spinach in batches, stirring until wilted (or add thawed frozen spinach). Pour in vegetable stock and simmer for 5 minutes. Stir in double cream, Parmesan, and nutmeg. Cook for another 3-4 minutes until creamy. Season with salt and pepper.
✨ Optional: Smooth Version
For a silkier finish: blend the sauce until smooth, then return to the pan and reheat gently.
How to Freeze & Store
Cool the sauce completely. Portion into silicone freezer trays for structured, calm weeknights (1-cup portions work perfectly for single servings). Freeze overnight. Once solid, transfer to labeled freezer bags or containers. Store up to 2 months.
Shelf life: 2 months frozen | 3 days refrigerated
How to Use During the Week
Thaw one portion overnight in the fridge, then reheat gently in a pan. Serve with wholegrain pasta, spelt pasta, or brown rice pasta for a more nourishing, steady-energy option.
Other ways to use:
- Toss with gnocchi or tortellini
- Use as a filling for stuffed chicken breasts
- Spoon over baked salmon
- Stir into risotto for extra creaminess
