Ingredients

  • 1 cup cooked quinoa
  • 1 cup roasted chickpeas
  • 1 cup roasted sweet potato cubes
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 avocado (add fresh daily)
  • 3 tablespoons tahini dressing

Tahini Dressing

  • 1/4 cup tahini
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • Water to thin
  • Salt and pepper

Instructions

  1. Roast sweet potato at 200°C (400°F) for 25 minutes.
  2. Roast chickpeas with olive oil and spices for 20-25 minutes until crispy.
  3. Cook quinoa and let cool.
  4. Make dressing: whisk all ingredients until smooth.
  5. Mason Jar Layering (for 5 days): Layer dressing at bottom, then quinoa, chickpeas, sweet potato, cabbage, carrots. Seal tight.
  6. When ready to eat: shake jar, pour into bowl, add fresh avocado.
