Pistachio Cardamom oat bars

These pistachio cardamom oat bars bring Middle Eastern-inspired flavor to wholesome oats.
Ingredients
- 200g rolled oats
- 100g butter
- 75g honey
- 50g light brown sugar
- 75g pistachios (roughly chopped)
- 1 tsp ground cardamom
- 1 tsp vanilla extract
- Optional: 1 tsp rose water
- Pinch of salt
Method
- Preheat oven to 180°C (160°C fan)
- Line a 20cm square tin with baking paper
- Melt butter, honey, and sugar in a pan
- Remove from heat, stir in cardamom, vanilla, and rose water (if using)
- Mix in oats, half the pistachios, and salt
- Press into tin, sprinkle remaining pistachios on top
- Bake for 20-25 minutes until golden
- Cool completely before cutting
