Batch Baking
Bake once, enjoy for weeks. Double the recipe and freeze half. These bars keep for 2 weeks in an airtight tin or 3 months in the freezer. Perfect for lunchboxes, afternoon tea, or whenever you need a proper treat.
The secret
Press the mixture down firmly - this creates that perfect chewy texture. Don't overbake; they'll firm up as they cool.
Storage tip: Layer between baking paper in an airtight tin. They actually improve after a day or two.
